I personally love feta with just about anything. And an abundance of blueberries this year has me very inspired to create new tastes incorporating blueberries. The other day I needed to use up some watermelon and I decided to make a watermelon, mint and feta salad, and add blueberries to it. What a lovely combination it turned out to be with the fresh mint and feta. This is quickly becoming one of my favourite summer salads as these little blue morsels add a flavour burst to the already refreshingly sweet watermelon in the salad.
I prefer the simpler tastes of extra virgin olive oil and salt to season this salad. I’ve found vinegar can overpower the sweetness of the watermelon at times. This was my lunch earlier this week and is the perfect amount for one. Consider increasing the quantities for when you have more people to feed.
- 2 cups cubed watermelon
- ¾ cup fresh blueberries
- ¼ cup crumbled feta
- 1-2 tbsp fresh mint, chopped
- kosher salt
- extra virgin olive oil
- Add watermelon, blueberries, feta, and mint into a bowl. Toss lightly. Drizzle with olive oil and sprinkle with salt.
