Fattoush Salad is a Middle Eastern salad made with ripe tomatoes, crisp cucumbers, fresh herbs and crunchy pita bread, tossed in a bright, lemony sumac dressing. Originating in the Levant, it’s fresh, colourful and one of my favourite salads.

Fattoush Salad
This refreshing salad is loaded with fresh vegetables, herbs and toasted pita bread for plenty of crunch. The dressing is simple, made with lemon juice, olive oil and sumac, a tangy Middle Eastern spice that gives fattoush its distinct flavour.
Serve it as a light meal or alongside falafel, shawarma, grilled chicken, beef or lamb.

Key Ingredients
The key ingredients in Fattoush Salad include:
1. Lettuce: Crisp romaine gives the salad a fresh, crunchy base.
2. Tomatoes: Ripe, juicy tomatoes add sweetness and acidity.
3. Cucumbers: Cucumbers bring another layer of fresh crunch to the salad.
4. Radishes: Thinly sliced radishes add a slightly peppery bite.
5. Red onion: A little thinly sliced red onion adds sharpness without overpowering the other ingredients.
6. Fresh herbs: Parsley and mint add loads of fresh flavour and are an important part of fattoush.
7. Pita bread: Toast pita until crispy, then break it into bite-sized pieces for the signature fattoush crunch.
8. Sumac: This tangy Middle Eastern spice adds a slightly sour, citrusy flavour. Plus, its deep red colour looks gorgeous sprinkled over the salad.
9. Dressing: Lemon juice, olive oil, salt and pepper keep the dressing simple and let all those fresh ingredients shine.

Why I Love Fattoush
I first tried Fattoush Salad at a Lebanese restaurant and was hooked. I eventually asked my Lebanese hairstylist how she made hers, took her tips home and started making my own version. It’s light, crunchy and has all the elements in a salad I adore.
