Tandoori Naan Pizza

Everyone in our house loves pizza.  But our pizza likes are as individual as our personalities and this is why the Tandoori Chicken Naan Pizza is a pizza just for me.

Hubs is meat & mushrooms and doesn’t stray far from it.  Kids vary between ham/pineapple, pepperoni with a few veggies or olives thrown on depending on their mood & the alignment of the sun, moon & the stars.  Me I prefer mostly veggie style pizzas with a variety of ingredients including chicken.  I also love to experiment and try new variations. So we tend to make pizza more often than we order them in as this enables us to make our pizzas to our individual tastes.

With pizza on the lunch agenda this week I decided to jump the gun after trying some delicious Tandoori Naan Bread last night and have pizza for lunch today.   Inspiration Struck.  The Tandoori Naan bread has Tandoori (curry) spices in the bread and it is seriously delicious.

I calorie counted this more for curiosity sake, not because I am calorie counting.  It comes in under 500 calories for the entire pizza….if you can finish it that is.

For those wondering about the Naan bread, here in Calgary I purchased it at the Co-op Grocery Store.  Remember when you make pizzas you do not have to use just pizza sauce…instead try tomato, BBQ, pesto…..experimentation is the name of the game.

Tandoori Chicken Naan Pizza
Recipe type: Appetizers, Chicken, Dinner, Food For One, Kid Friendly, Lunch, Pizza, Quick Meals, Sides, Snacks
 
Ingredients
  • 1 piece Tandoori Naan bread
  • 1 tbsp mango chutney
  • ¼-1/2 cup leftover roast chicken, shredded or cut up
  • ⅓ cup grated pizza cheese or straight mozzarella
  • ¼ of a pepper (yellow, red, orange), sliced or diced
  • Handful of cilantro, torn
Instructions
  1. Spread your mango chutney all over your naan bread. If you need more use more but your calorie count goes up 40 calories per tbsp of mango chutney used.
  2. Next layer on your chicken and peppers. You can sprinkle on some cilantro and then add your cheese.
  3. Broil in oven for about 2-3 minutes or until cheese melted and bubbling. I bake mine on a pizza stone but a cookie sheet or pizza pan works just as well.
  4. Remove from oven, let sit for a few minutes before slicing. Since I love cilantro I add fresh on top. If you do not like cilantro, flat leaf parsley will work too.
  5. Hmmm…next time I may sprinkle on some spanish/purple onions.

The flavour profile in our Sticky Hoisin Orange Chicken is outstanding.

We prefer to use boneless, skinless chicken breasts for this recipe but you can use bone in and skin on, or drumsticks if you prefer for this dish. Whatever you decide, you will love it I’m sure.

Do not overcook and continue to baste chicken throughout cooking time. We served ours with noodles (kids), sometimes coconut rice, and steamed broccoli.

Sticky Hoisin Orange Chicken
Recipe type: dinner, entree, lunch, chicken,
Serves: 4
 
Ingredients
  • 4 - chicken breasts
  • ½ cup - hoisin sauce
  • 1 tbsp oyster sauce
  • 2 tbsp - toasted sesame seeds
  • 1.5 tbsp - soy sauce
  • 2 tsp - sesame oil
  • 1 tsp - grated orange rind
  • ¼ cup orange juice
Instructions
  1. Preheat oven to 425F degrees.
  2. Mix all ingredients (except chicken) together.
  3. Put your chicken onto a greased and foil or parchment lined baking sheet (rimmed).
  4. Brush mixture onto chicken reserving some for basting.
  5. Bake in oven, turning and brushing with reserved glaze halfway through cooking time approx. 20-25 minutes depending on your oven or until no longer pink inside.

  • Surprise surprise we fondued again this weekend. This time a marinated sesame chicken in broth + a cheese fondue made with a porter (beer). Lots of great flavour happening and too much chicken!

We finished with a small bowl of chicken soup using the leftover broth with some vermicelli noodles and sliced green scallions I had on stand by. Another amazing fondue is in the books!

In the first photo the incredibly tasty booze soaked cherries fell in to the hot tub aka hot chocolate. The second photo shows the cherries pre-hot tub.

The hot chocolate is missing the marshmallow as they apparently ran out of marshmallows. Hopefully this means they are selling lots of hot cocoa for @yychotchocolatefest!

Made these Burnt Butter and Salted Maple Sticky Buns for the #rainydaybitescookbookclub challenge. Admittedly I took the photo before adding the salt (whoops)! The dough is easy to work with and I let both rises go longer than advised.

The glaze for these buns goes both on the bottom and again poured over the buns when they come out of the oven hot. My family loved them and ate most of them as they were a little on the sweet side for me.

  • -28 with the wind chill is no deterrent when it comes to trying hot chocolate during @yychotchocolatefest. This is the Frozen Hot Chocolate Gelato from @fiascogelato and it is so delicious that you completely forget its ahem frozen and -28 out side.
