Sun & Salsa Festival | Cucumber Salsa

Ingredients
3-4
mini cucumbers
chopped (roughly 1 cup)
2-3
roma tomatoes
seeded and chopped (1 cup)
2
green onions
sliced thin

tbsp
olive oil
1
tbsp
lemon or lime juice
salt and pepper to taste
Instructions
Add all ingredients into a bowl and stir. Taste for seasoning and add more salt as necessary.
You can eat as is, or let it sit for a couple hours allowing flavours to blend.
Notes
Add ins could be chopped white or red onion and diced jalapeno pepper.
