In a bowl using a mixer combine your butter, brown sugar & white sugar until fluffy. Add the eggs one at a time beating well after each egg. Stir in vanilla.
In a second bowl, combine flour, baking soda and salt. Slowly add into wet mixture.
Fold in all chips and drop spoonfuls (approximately 1 tbsp) onto parchment lined baking sheets leaving enough room between cookies for expansion.
Bake for 8-10 minutes until light brown. Allow cookies to sit a few minutes on baking sheet, cooling. Remove to wire racks.

Replace peanut butter chips with butterscotch chips if you plan on sending these chewy chipsters to school!
