Brussels Sprouts Brown Rice Bowl with Cilantro Lime Drizzle

Ingredients
1/2 - 1cupcooked brown rice
1/4cuppeppers & spanish onionchopped
1/4cupcooked lentils
1/4cupbrussels sproutslightly sauteed
1/4cupbaby tomatoeshalved
1-2radishessliced thin
1jalapeno cut thin and sauteed lightly
2-3small bocconcini balls
Cilantro Lime Dressing
Instructions
Put brown rice in bowl.
Add each item on top of brown rice.
Pour on some of your Cilantro Lime Drizzle & serve.
Notes
To make Cilantro Lime Dressing: Mix together 1 part lime juice to 3 parts olive oil. Add 1/2 cup cilantro, pinch of salt & pepper & puree with a hand mixer, food processor or blender. Use within a day or two.
