Honey Roasted Carrots

Ingredients

  • 4 cups carrots, sliced on a diagonal
  • 1 tbsp melted butter
  • 1 tbsp olive oil
  • 1/4 cup fresh lemon juice
  • 1/4 cup honey
  • sea salt
  • black pepper
  • 1/2 cup Carrot Top Gremolata

Instructions

  • Preheat oven to 425 F.
  • In a baking dish toss carrots with butter, oil, lemon juice, honey, salt, and pepper.
  • Roast for 20 - 25 minutes stirring occasionally until the carrots are tender and starting to caramelize on the ends.
  • Remove from oven, cover with aluminum foil until ready to serve.
  • When ready to serve, spoon onto a serving platter and drizzle on the Carrot Top Gremolata.
