Grilled Peach, Strawberry and Watermelon Salsa

  • 1 cup watermelon small dice
  • 1 cup strawberries hulled and small dice
  • 3/4 cup grilled peach small dice
  • couple fresh mint leaves chopped or torn into small pieces
  • 1 tsp jalapeno seeded and diced very small
  • 1 tbsp lime juice
  • 1-2 tbsp olive oil
  • salt


  • Cut your peaches in half, remove stone. Brush insides with olive oil. Place on indoor grill pan or outdoor BBQ until golden brown or just cooked through. Char marks = flavour. Set aside to cool. Once cool, dice enough to make 3/4 cup. Eat the rest.
  • In a bowl mix together watermelon, strawberries, grilled peach, jalapeno, mint leaves, lime juice, olive oil and a good sprinkle of salt.
  • Serve with taco chips, pita chips or with grilled chicken or fish.
