Cut your peaches in half, remove stone. Brush insides with olive oil. Place on indoor grill pan or outdoor BBQ until golden brown or just cooked through. Char marks = flavour. Set aside to cool. Once cool, dice enough to make 3/4 cup. Eat the rest.
In a bowl mix together watermelon, strawberries, grilled peach, jalapeno, mint leaves, lime juice, olive oil and a good sprinkle of salt.
Serve with taco chips, pita chips or with grilled chicken or fish.
