The Blue Cheese, Pear and Dark Ale Caramelized Onion Burger

1/2cupgrated white cheddar cheese
1pear sliced thin and rough chopped
1onion sliced into thin rings
1tspspice blendyour favourite, we used za'atar
salt & pepper
1/2cupblue cheese crumbles
Melt butter and olive oil in pan over medium high heat. Add in your onions, turn the heat down and let your onions cook slowly. After about 10 minutes pour in your dark ale. Cook for another 10-15 minutes or until the onions are soft and lightly browned. The liquid will evaporate. Set aside to cool.
Combine burger, cheese, pear, 1/4 cup of the caramelized onions, spice blend, salt, pepper and shape into patties.
Grill over medium heat until completely cooked through. Toast your buns, cut side down, until lightly browned.
While still on the grill top your burger with some blue cheese and then the leftover caramelized onions. Leave on grill until cheese starts to ooze a little into the onions.
Once off the grill spread some chipotle mayo on your bun and top with fresh spinach.
This makes 5 good sized burgers or 8 medium sized burgers.
To make chipotle mayo combine 3/4 cup mayo with 1-2 tbsp chipotles in adobe sauce. For a finer consistency puree.
