Spooky Halloween Cookies

Ingredients

  • 6 cups all-purpose flour
  • 2 cups cocoa powder
  • 2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 lb 2 cups butter
  • 3 1/2 - 4 cups icing sugar
  • 4 large eggs lightly beaten
  • 2 tsp vanilla

Instructions

  • In a bowl sift together flour, cocoa powder, cinnamon and salt.
  • In a large bowl mix your butter and sugar on medium speed until light and fluffy. Beat in eggs and vanilla.
  • Add dry ingredients and mix well until combined. Divide dough in half, shape into a disc, wrap each piece in plastic wrap and chill for 30-60 minutes.
  • Preheat oven to 350 degrees. On a floured surface roll out dough to at least 1/8 inch thickness. Cut out your Spooky shapes and lay onto parchment lined baking sheet. You can re-roll the dough scraps 1-2 times before it will become over worked.
  • Bake in oven until firm approximately 8-10 minutes. Let sit in pan a few minutes then transfer to a wire rack to cool completely.
  • Once cooled decorate with your favourite icing & sprinkles.
