Honey Roasted Carrots
- 4 cups carrots, sliced on a diagonal
- 1 tbsp melted butter
- 1 tbsp olive oil
- 1/4 cup fresh lemon juice
- 1/4 cup honey
- sea salt
- black pepper
- 1/2 cup Carrot Top Gremolata
Preheat oven to 425 F.
In a baking dish toss carrots with butter, oil, lemon juice, honey, salt, and pepper.
Roast for 20 - 25 minutes stirring occasionally until the carrots are tender and starting to caramelize on the ends.
Remove from oven, cover with aluminum foil until ready to serve.
When ready to serve, spoon onto a serving platter and drizzle on the Carrot Top Gremolata.
