Apple & Halloom Salad with Apple Cider Vinaigrette

Ingredients

  • 2 tbsp minced shallots
  • 1/2 cup olive oil
  • 1/4 cup apple cider vinegar
  • 2 tsp dijon mustard
  • 2 tsp honey
  • 3 thick slices Halloom
  • 1/2 cup slivered almonds toasted
  • 1 red skinned apple ambrosia or gala
  • 8 cups lettuce or mixed greens

Instructions

  • For dressing whisk together shallots, oil, vinegar, mustard and honey.
  • Just before serving core and thinly slice apple. Lightly brush some oil onto Halloom and grill over medium-high heat until warmed through and you get some nice grill marks on the cheese. Let cool for a few minutes and then dice.
  • Add lettuce/greens to a bowl, toss in apple, Halloom, toasted almonds and enough dressing to coat lettuce/greens (you may not need to use all of the dressing). Mix well and serve.
