Grilled Corn, Radish & Arugula Salad

Ingredients

  • 3 cups arugula
  • 2 radishes sliced thin
  • 1 corn cob grilled
  • 1 lime juiced
  • olive oil
  • salt and pepper

Instructions

  • Cut the corn kernels from the cob, and place in a bowl. Mix in radishes and arugula.
  • In a bowl or measuring cup whisk together lime juice, 1-2 tbsp of olive oil and a pinch of salt and pepper.
  • Pour dressing over salad, toss and serve.
