Iceberg Wedge Salad with Bacon

Ingredients

  • 1 head iceberg lettuce cut into four wedges
  • 1 tbsp blue cheese crumbles
  • 3 pieces bacon cooked and chopped
  • 1 tsp fresh chives
  • 1 tsp fresh dill
  • 1 tbsp pistachios

Dressing

  • White Balsamic Dressing
  • white balsamic vinegar
  • extra virgin olive oil
  • Dijon mustard
  • salt and pepper
  • shallot

Instructions

  • Add a piece of wedge to a plate.
  • Sprinkle on blue cheese through pistachios.
  • In a small bowl or measuring cup whisk together 2 tbsp white balsamic vinegar, 6 tbsp extra virgin olive oil, 1 tbsp Dijon mustard, 1/2 tsp kosher salt, fresh ground black pepper and 1 small chopped fine shallot.
  • Pour dressing over salad and serve.
