Ingredients

  • 1-2 cups loaf day old french bread sliced 1 inch thick
  • 1 cup cherry tomatoes halved
  • 1 cup fresh cherries halved & pits removed
  • 2 tbsp toasted pepitas (pumpkin seeds)
  • 1 package halloumi cheese, cut into slices, grilled and cut into smaller bite size pieces
  • 1/4 fresh basil sliced thin or small leaves
  • olive oil
  • red wine vinegar
  • honey
  • salt and pepper

Instructions

  • Preheat your grill to medium high.
  • Cut your bread into 1 inch slices and drizzle with olive oil on both sides. Grill bread on both sides until grill marks or a little char occurs.
  • Chop into bite size pieces. Set aside.
  • In a medium sized bowl lightly toss cherries, tomatoes, halloumi cheese, grilled bread and dressing.
  • Sprinkle with fresh basil and pepitas. Serve immediately.

Notes

To make dressing mix together 1/3 cup of oil with 1/4 cup red wine vinegar. Add in a little honey or agave syrup and sprinkle of salt and pepper. Whisk until combined.
