1-2cupsloaf day old french breadsliced 1 inch thick
1cupcherry tomatoeshalved
1cupfresh cherrieshalved & pits removed
2tbsptoasted pepitas(pumpkin seeds)
1package halloumi cheese, cut into slices, grilled and cut into smaller bite size pieces
1/4fresh basilsliced thin or small leaves
olive oil
red wine vinegar
honey
salt and pepper
Instructions
Preheat your grill to medium high.
Cut your bread into 1 inch slices and drizzle with olive oil on both sides. Grill bread on both sides until grill marks or a little char occurs.
Chop into bite size pieces. Set aside.
In a medium sized bowl lightly toss cherries, tomatoes, halloumi cheese, grilled bread and dressing.
Sprinkle with fresh basil and pepitas. Serve immediately.
Notes
To make dressing mix together 1/3 cup of oil with 1/4 cup red wine vinegar. Add in a little honey or agave syrup and sprinkle of salt and pepper. Whisk until combined.
