In a large pot add bacon and render over medium heat until cooked.
Add shallot and saute for 2 minutes. Add in your turkey and cook with bacon & shallot until no more pink remains breaking it up as you go.
Stir in cumin, chili powder, a good pinch of salt & pepper, chipotle in adobo, diced tomatoes, chicken stock and tomato sauce. Bring to a boil then reduce to a simmer.
Let flavours marry for about 30 minutes or so. Pour in your beans stirring to mix in.
Simmer another 10 minutes and then serve with your favourite fixins or put an egg on it.
Notes
Additional toppings include: Eggs: poached, deviled or fried, chopped peppers, onion, grated cheese, chopped tomatoes. Chips, vegetable chips like kale, even cooked vegetables can go on top of this chili.
