Coconut Rice

Jasmine rice

14 oz coconut milk, not light version

Instructions
Soak rice for 10 minutes and rinse until it runs clear.
Add rice, coconut milk, water and salt to a saucepan with a lid over medium high heat.
Bring to a boil then drop immediately to a simmer. Add lid and let it cook for 10-15 minutes or until all liquid has been absorbed.
Remove from heat and let sit to steam for about 10 minutes. Then remove lid and fluff with a fork. Serve.
