Coconut Rice

Ingredients

  • 2 cups Jasmine rice
  • 1 can 14 oz coconut milk, not light version
  • 1/2 cup water
  • salt

Instructions

  • Soak rice for 10 minutes and rinse until it runs clear.
  • Add rice, coconut milk, water and salt to a saucepan with a lid over medium high heat.
  • Bring to a boil then drop immediately to a simmer. Add lid and let it cook for 10-15 minutes or until all liquid has been absorbed.
  • Remove from heat and let sit to steam for about 10 minutes. Then remove lid and fluff with a fork. Serve.
