Grilled Zucchini with Feta
This dish packs a punch flavour wise, yet remains simple and elegant. If you love heart serve with thinly sliced red Thai chili peppers. Swap feta for cojita or goat cheese for another flavour element.
Servings: 4
- 2 tbsp olive oil + more for grilling
- 1 tbsp white wine vinegar
- 2 tbsp fresh dill or basil, chopped (set some aside for a garnish)
- 2 green onions, chopped
- 1/4 tsp each salt and pepper
- 1 medium zucchini
- 1/2 cup feta cheese, crumbled
In a bowl, whisk together oil, vinegar, dill or basil, green onion, salt, and pepper. Set aside.
Cut zucchini into spears and drizzle with olive oil. Season with salt and pepper.
Grill zucchini directly on grill for approximately 8-10 minutes or until tender. Transfer to serving dish, drizzle on dressing and lightly toss.
Sprinkle on a little more olive oil and the cheese and serve.
