Grilled Zucchini with Feta
Simple and satisfying, Grilled Zucchini with Feta showcases the best of summer produce. Tender crispy grilled zucchini is given extra flavour with a light char and grill marks. A light dressing and tangy feta sprinkled on top creates a light, refreshing summer dish you will want on repeat as long as the zucchini is in season!
Buying Zucchini
Selecting the right zucchini can make a big difference in the taste of your dish. When buying zucchini look for:
- Smaller zucchinis vs the monsters – smaller ones will be more tender and flavourful. The larger they are, the more water they hold and can be lacking in flavour.
- Firm to the touch – check for soft spots and blemishes. Buy zucchini that is firm to the touch.
- Freshness counts – look for zucchini that is bright, firm and fresh looking.
- Variety is the spice of life – green zucchini is the most common variety, however you can find other varieties like yellow and striped.

Ingredients
- 2 tbsp olive oil + more for grilling
- 1 tbsp white wine vinegar
- 2 tbsp fresh dill or basil, chopped (set some aside for a garnish)
- 2 green onions, chopped
- 1/4 tsp each salt and pepper
- 1 medium zucchini
- 1/2 cup feta cheese, crumbled
Instructions
- In a bowl, whisk together oil, vinegar, dill or basil, green onion, salt, and pepper. Set aside.
- Cut zucchini into spears and drizzle with olive oil. Season with salt and pepper.
- Grill zucchini directly on grill for approximately 8-10 minutes or until tender. Transfer to serving dish, drizzle on dressing and lightly toss.
- Sprinkle on a little more olive oil and the cheese and serve.
