Combine all ingredients except chicken in sealable plastic bag or bowl with a lid. Squish it to mingle flavours and if needed add a splash of oil to loosen it up. The mixture should not be tight. Add chicken, squeezing to ensure marinade permeates chicken.
Let stand 30 minutes at room temp or longer in fridge to develop flavours. Remove chicken from marinade and discard the marinade.
Grill over medium heat approximately 5-7 minutes per side or until chicken is cooked through and a meat thermometer reads 165 F.
Remove from grill and let sit a couple minutes. Serve with rice.
