Thai-Inspired Chicken

Ingredients

  • 1/3 cup fresh basil chopped fine
  • 1/3 cup fresh mint chopped fine
  • 1/3 cup fresh cilantro chopped fine
  • 2 tbsp grated ginger
  • 2 tbsp soy sauce
  • 3 garlic cloves minced
  • 3 bay leaves
  • 1 tsp sugar
  • 1 tsp green curry paste
  • 1/4 cup oil canola or olive
  • dash of hot sauce
  • 4-6 skinless, boneless chicken breasts

Instructions

  • Combine all ingredients except chicken in sealable plastic bag or bowl with a lid. Squish it to mingle flavours and if needed add a splash of oil to loosen it up. The mixture should not be tight. Add chicken, squeezing to ensure marinade permeates chicken.
  • Let stand 30 minutes at room temp or longer in fridge to develop flavours. Remove chicken from marinade and discard the marinade.
  • Grill over medium heat approximately 5-7 minutes per side or until chicken is cooked through and a meat thermometer reads 165 F.
  • Remove from grill and let sit a couple minutes. Serve with rice.
