Easy Homemade Chorizo Recipe

When chorizo can be hard to find, pick up a few ingredients and make this Easy Homemade Chorizo for your next favourite recipe.

For many years my Uncle lived in San Diego, California, and when we would visit him he would take us over the Mexican border to Tijuana for some local Mexican eats. I had no clue what I was eating back then but I knew I liked it. It’s taken awhile for Calgary to get some good Mexican restaurants but we finally we have a decent selection most with delicious tacos!

Spanish Chorizo vs Mexican Chorizo

Did you know there was a difference?! Spanish chorizo and Mexican chorizo are two entirely different beasts. We were educated on Spanish chorizo by our Spanish student. He taught us their chorizo is cooked and cured, then sliced and enjoyed as is or added to dishes.

Mexican chorizo is raw and in a casing therefore requires cooking before consuming. Once cooked it can be used for tacos, in chili, quesadillas, all kinds of dishes. Both chorizos are entirely flavourful yet different at the same time.

Before I created this recipe I spoke with a few local Mexican eateries to learn about chorizo. Mexican’s are known to use authentic dried Mexican chili’s in their chorizo recipes. Growing up in a small town I know first hand sourcing ingredients can be challenging at times and not everyone will have access to unique dried chili’s, therefore we are using chili powder. The red colour in the chorizo comes from the chili powder and the paprika.

This recipe is as easy to make as assembling and cooking ground beef for tacos. Use chorizo in tacos, quesadillas, breakfast hash or casseroles, pasta dishes, in dips and even stuffed into vegetables.

Serves: 6
 
Ingredients
  • 2 lbs ground pork
  • 2 tsp chili powder
  • 2 tbsp paprika
  • 1 tbsp cumin
  • 1 tbsp oregano
  • 1 tsp coriander
  • 1 tbsp garlic powder
  • 1 tsp sea salt
  • 1 tsp fresh cracked black pepper
  • ¼ cup apple cider vinegar
  • Cooking oil (vegetable, canola, olive oil)
Instructions
  1. Add pork and all ingredients to a bowl gently mixing until just combined.
  2. Over medium high heat in a skillet add a drizzle of cooking oil and your chorizo.
  3. Cook chorizo until nicely browned.
  4. Use right away in tacos or another dish. Or put into storage containers and refrigerate until ready to use.

  • Surprise surprise we fondued again this weekend. This time a marinated sesame chicken in broth + a cheese fondue made with a porter (beer). Lots of great flavour happening and too much chicken!

We finished with a small bowl of chicken soup using the leftover broth with some vermicelli noodles and sliced green scallions I had on stand by. Another amazing fondue is in the books!

In the first photo the incredibly tasty booze soaked cherries fell in to the hot tub aka hot chocolate. The second photo shows the cherries pre-hot tub.

The hot chocolate is missing the marshmallow as they apparently ran out of marshmallows. Hopefully this means they are selling lots of hot cocoa for @yychotchocolatefest!

Made these Burnt Butter and Salted Maple Sticky Buns for the #rainydaybitescookbookclub challenge. Admittedly I took the photo before adding the salt (whoops)! The dough is easy to work with and I let both rises go longer than advised.

The glaze for these buns goes both on the bottom and again poured over the buns when they come out of the oven hot. My family loved them and ate most of them as they were a little on the sweet side for me.
