This is a recipe that’s been passed along and enjoyed at Christmas for decades and as such I have no idea where the recipe originates.
My mom would whip up these tasty marshmallow treats every Christmas. It was so hard for us kids to wait for them to set up in the freezer before sampling the goods. We didn’t always love coconut and if you have non coconut fans in your family you can roll the log in crushed nuts or graham wafer crumbs instead. You could also substitute coloured mini marshmallows for the plain white ones and add in chopped dried fruit (glazed red & green cherries would make it more festive). The options are endless.
I have kept the custom going in my family the way my mom used to make it and it has become a part of our holiday baking tradition.
Ingredients
- 4 squares semi sweet chocolate
- 4 tbsp butter
- 1 egg beaten
- 1 cup icing sugar
- 3/4 cup shredded coconut
- 3 cups miniature marshmallows
- Aluminum Foil
Instructions
- Melt butter & chocolate in a bowl over pot with hot water or double boiler. Remove from heat and whisk in egg until combined. Cool for a few minutes then gently mix in icing sugar and marshmallows.
- Meanwhile sprinkle a large piece of tin foil with coconut. Pour the chocolate mixture over the coconut in a long log like shape. You will need to get your hands dirty to help mold it into an evenly shaped log. Roll like a jelly roll/log in the coconut. Wrap & seal entire log in aluminum foil and keep in freezer until ready to serve.
