January is typically about smoothies for me. Trying to eat better following December’s eating palooza of treats, fatty foods and alcoholic beverages. By the time New Years comes around I’m feeling it and need a healthy kick. Enter smoothies.
Versatile and delicious, anything goes right. You don’t have to put a lot of thought into them. Juice, coconut milk, even water can be the liquid that loosens it all up. Keep some frozen berries or fruit on hand. Add in cinnamon, or not. Play a little and find a combo that works for you.
I was low on supplies when I made this. I alway try to have coconut milk on hand and some form of frozen fruit. Every thing else is bygones.
- 1 cup frozen mango
- ½ avocado
- ½ cup coconut milk
- ½ cup pineapple or mango juice
- 1 tsp cinnamon
- Toppings: toasted coconut flakes, chia seeds
- Place all ingredients into a blender and puree until smooth.
- Pour into glass, sprinkle on your toppings, add a straw, and serve.
