Waffle Cone Fruit Salad

A fun treat for the kids any time of the year. During Winter you may be limited to using whatever fruit is available in your grocery store. I know we definitely are here as certain out of season fruit that has been shipped in from afar, tends to taste bland and not good. In Summer fresh fruit can be found everywhere.

I’ve been making this waffle cone treat for the kids for years. When I make my fruit salad, the only thing I add in sometimes is fresh, thinly sliced mint. I enjoy the full, sweet flavours of the fruit and don’t feel it needs a dressing. I’ve taught my kids to enjoy these simple flavours as well. If you need to have a dressing with your fruit salad, by all means use your favourite. Or even mix in a little yogurt. You can also buy the mini cones and make small versions of this treat for those “mini” hands.

This recipe is incredibly simple and can be used in many ways: great for birthday parties, an alternative to the constant request of “can I have an ice cream cone”, good camping treats, a quick breakfast with a side of yogurt, make it for lunch with some cheese & crackers on the side, add a small dollop of whipping cream on top, make it for game day or bring to a potluck.

But the best part is the kids can be involved in making this enjoyable treat.

Waffle Cone Fruit SAlad

Serves: 4
 
Ingredients
  • 4 cups of your favourite fruit, cleaned, peeled and chopped into smaller pieces where needed
  • 4-5 waffle ice cream cones, regular size
  • 1 tbsp fresh mint, chiffonade (thin chop)
Instructions
  1. Mix your fruit together in a bowl and add chopped mint.
  2. Scoop fruit into each waffle cone and enjoy.

    We’re having a dessert buffet for my son’s graduation party – all decadent and chocolate, or caramel or….you get the picture. This could be a wonderful less-sweet alternative on the buffet table! But I need to do as much prep ahead of time as possible. My guess is I shouldn’t fill the cones more than a few hours ahead of time or they might get soggy, would you agree? Maybe dice the fruit (of necessary), put that in a Tupperware, have the cones at the ready and then fill & display at the last minute?

  • Surprise surprise we fondued again this weekend. This time a marinated sesame chicken in broth + a cheese fondue made with a porter (beer). Lots of great flavour happening and too much chicken!

We finished with a small bowl of chicken soup using the leftover broth with some vermicelli noodles and sliced green scallions I had on stand by. Another amazing fondue is in the books!

In the first photo the incredibly tasty booze soaked cherries fell in to the hot tub aka hot chocolate. The second photo shows the cherries pre-hot tub.

The hot chocolate is missing the marshmallow as they apparently ran out of marshmallows. Hopefully this means they are selling lots of hot cocoa for @yychotchocolatefest!

Made these Burnt Butter and Salted Maple Sticky Buns for the #rainydaybitescookbookclub challenge. Admittedly I took the photo before adding the salt (whoops)! The dough is easy to work with and I let both rises go longer than advised.

The glaze for these buns goes both on the bottom and again poured over the buns when they come out of the oven hot. My family loved them and ate most of them as they were a little on the sweet side for me.

  • -28 with the wind chill is no deterrent when it comes to trying hot chocolate during @yychotchocolatefest. This is the Frozen Hot Chocolate Gelato from @fiascogelato and it is so delicious that you completely forget its ahem frozen and -28 out side.
