Orange Waffles

Recently these orange waffles have become one of our favourites for breakie. We go through stages. We’re crazy like that. We’ve been on a waffle kick for a couple months now. The waffle maker has been taking up permanent residence on the counter. Might need to move and dust under it soon.

A while back I attempted for the first time ever, chicken & waffles. Surprised everyone, as it was a huge hit. I’ve had requests to make it again. Now that I can cook on the BBQ and not smoke up the house with the chicken, I’m excited to cook up another batch of chicken and waffles. Mmmmm.

The orange flavour in these waffles is light but memorable. We almost always have to have them with maple syrup, whipping cream and a little orange zest for good measure. Important to note this recipe only makes 6 individual waffles and if you end up loving them as much as we do, you will need to double the recipe. Just sayin.

Ingredients
  • 1½ cup flour
  • 1 tbsp baking powder
  • 2 tbsp brown sugar
  • 1 tsp baking soda
  • pinch of salt
  • ½ cup butter, melted
  • 1 cup milk
  • 2 eggs
  • ½ cup sour cream
  • 2 tbsp orange zest
  • 2 tbsp orange juice
  • ½ tsp vanilla
  • maple syrup
  • whipping cream, whipped
Instructions
  1. Preheat waffle maker.
  2. In a bowl whisk together eggs, milk, sour cream, butter, vanilla, orange zest and orange juice. Set aside.
  3. In a large bowl mix together flour, baking powder, baking soda, pinch of salt and brown sugar. Add wet ingredients and stir to combine.
  4. Turn waffle maker to your desired setting (we use medium) and pour in about 1 cup of the batter per batch spreading evenly all over the waffle maker. Cook until done.
  5. Using a spatula remove waffles and serve immediately. Or keep in oven on low temp until ready to serve.

A creme brulee is a combination of whipping cream and egg yolks. It’s a versatile dessert in that you can change it up to suit the seasons, a special holiday or even a celebration. Chocolate can be added, liqueur, even fresh fruit.

We’ve added fresh raspberries to our velvety, rich custard infusing it with fresh picked raspberries for a light and delicious Spring or Summer dessert. Make the custard the day before you plan to serve it and store keep it in the fridge until ready to brulee and serve.

There are two ways to brulee the top. Invest in a creme brulee torch or bake in the oven as per instructions. We’ve found the torch the better option of the two giving the top the crunchy, delicious topping everyone associates with creme brulee.

Pro Tips:

  • Whipping cream can boil over so watch it carefully
  • Strain your custard before pouring into your ramekins
  • Once in ramekins remove the bubbles from the surface otherwise your sugar will not brulee properly
  • Use paper towel to remove bubbles on custard
  • You can make and chill the custard in the ramekins a day ahead

Raspberry Creme Brulee
 
Ingredients
  • 3 cups whipping cream
  • 8 egg yolks (whites can be frozen for later use)
  • ⅓ cup granulated sugar
  • 2 tsp vanilla
  • 1-2 cups fresh cleaned raspberries
  • ½ cup granulated white sugar (for topping)
Instructions
  1. Preheat your oven to 300F.
  2. In a pan over medium-high heat add your cream and heat until it is steaming (not boiling).
  3. In a bowl whisk together your egg yolks with your sugar. Mix well. Now you need to temper your eggs. Pour in ¼ cup of the hot cream and mix well. Then pour in another ½ cup of the hot cream, mixing well again. At this point your eggs should be tempered and you can slowly pour the rest of the hot cream in. Whisk and add vanilla. Skim off foam with a spoon.
  4. Add a 6 raspberries to each ramekin. Pour egg mixture into ramekin with raspberries. Place in a large casserole pan.
  5. Pour in enough boiling water to come halfway up the sides of ramekins.
  6. Bake in oven for 10 minutes and then increase your temperature to 350F.
  7. Bake for 20-25 minutes or until edges set, the centers still jiggle and toothpick inserted comes out creamy.
  8. Remove from water bath and let cool on racks. Once cooled relocate to the fridge, cover and leave for several hours until set.
  9. Turn oven to broil and move oven rack up. Place ramekins on rimmed baking sheet. Sprinkle sugar evenly over entire top of ramekins.
  10. Or using a torch carefully brulee the sugar staying away from the edge of the ramekin and constantly moving the torch.
  11. Broil approx. 6 inches from heat for 2 – 5 minutes or until sugar bubbles and darkens.
  12. Remove from oven and let cool down enough to place back in fridge for at least 30 minutes before serving.
  13. To serve put single ramekin on a place and sprinkle fresh raspberries on top.

Grilled Angel Food Cake

Grilling Angel Food Cake allows the sugar in the cake to caramelize giving this dessert a delicious flavour boost. We love to entertain with this dessert as it’s as how stopper. No on really believes you can grill angel food cake! Most of the time we buy our angel food food cake from the store to save time.

It’s fun to set up a grilled angel food cake bar. We like to put out several toppings….tonight it was chocolate sauce, blueberry sauce, strawberry sauce, vanilla ice cream, fresh cut up strawberries and peaches and fresh whipping cream. Then everyone helps themselves to whatever toppings they wish. My boy even ran to the pantry to get some sprinkles for his!

As the sugars in the angel food cake brown up quickly do not leave the grill when you are barbecuing these delicate pieces of cake. Talking from experience they can quite quickly turn black!

Cut up some fruit or scoop on some ice cream. Topping options are endless!

  • 1 prepared Angel Food Cake

Instructions
  1. It helps if the Angel Food Cake is a day or two old. I've found cutting it when it's fresh out of the oven or home from the store is challenging as it's too soft.
  2. Cut your cake into several one inch pieces. Place on grill over medium high heat and stay there watching and flipping cake pieces until lightly browned.
  3. Serve with your favourite topping.
Notes
We've enjoyed this grilled with many toppings. Try fruit salsa, grilled peaches, caramelized banana and/or pineapple, chocolate sauce, nutella, caramel sauce, strawberry and/or blueberry sauce, ice cream and whipping cream.

  • Surprise surprise we fondued again this weekend. This time a marinated sesame chicken in broth + a cheese fondue made with a porter (beer). Lots of great flavour happening and too much chicken!

We finished with a small bowl of chicken soup using the leftover broth with some vermicelli noodles and sliced green scallions I had on stand by. Another amazing fondue is in the books!

In the first photo the incredibly tasty booze soaked cherries fell in to the hot tub aka hot chocolate. The second photo shows the cherries pre-hot tub.

The hot chocolate is missing the marshmallow as they apparently ran out of marshmallows. Hopefully this means they are selling lots of hot cocoa for @yychotchocolatefest!

Made these Burnt Butter and Salted Maple Sticky Buns for the #rainydaybitescookbookclub challenge. Admittedly I took the photo before adding the salt (whoops)! The dough is easy to work with and I let both rises go longer than advised.

The glaze for these buns goes both on the bottom and again poured over the buns when they come out of the oven hot. My family loved them and ate most of them as they were a little on the sweet side for me.

  • -28 with the wind chill is no deterrent when it comes to trying hot chocolate during @yychotchocolatefest. This is the Frozen Hot Chocolate Gelato from @fiascogelato and it is so delicious that you completely forget its ahem frozen and -28 out side.
