I’d never heard of a smoothie being made with lentils before. So when the Canadian Lentils Contest came round again this year, I knew I had to try a smoothie with lentils especially since smoothies are a weekly occurrence here. The kids love to add their own spinach to the smoothies since they know they can’t even taste it.
There are 5 categories you can enter in this contest and while in smaller form this smoothie could be considered an appetizer, I think it more suits the “Freestyle” category.
As I started to assemble ingredients, pulling the usual smoothie suspects out, the assortment of items became quite large. Since I had cooked lentils in the fridge, I knew I could test this recipe out a few times until I got it right. But lucky me it worked the first time and nobody knew there were lentils in their smoothies. Winner.
- ½ avocado
- 1 tsp fresh ginger, peeled & sliced into coins
- ½ cup apple, peeled & diced
- ½ banana
- ½ cup cooked green lentils
- 1 cup frozen berries
- ½ cup fresh spinach
- ¼ cup water
- 1 tsp cinnamon
- ½ cup coconut milk
- Add everything into your blender or mixer container and blend until smooth.
- Serve immediately.
