Fresh bocconcini, plump summer blueberries and ripe luscious tomatoes mixed with fresh basil, extra virgin olive oil and sea salt create this unforgettable Blueberry Caprese Salad.

Blueberry Caprese Salad

A traditional Italian Insalata Caprese is made with tomatoes, fresh mozzarella or bocconcini and fresh basil. It is named after the island of Capri in Italy. Italian’s love it for it’s simplicity, freshness and colours that represent the Italian flag.

A Twist on a Classic

In our twist on a classic recipe, we’ve added in some fresh blueberries from British Columbia and topped with pistachios for a little texture and crunch.

Our salad is lightly dressed with simple flavours including extra virgin olive oil and a little sea salt. Keep it simple and let the flavours shine.

What to eat with this Salad

While we could seriously eat it all by itself, this salad will compliment any summer grilling meat or vegetarian dish. It’s a standout at potlucks and pairs nicely with a light, crisp Sauvignon Blanc or Pinot Grigio.

It’s become a show stopper that we have to make whenever blueberries are in season!

Interested in trying this salad? Here’s a few things to consider when making this salad:

PRO TIPS

  • Use fresh blueberries, not frozen
  • Add a splash of balsamic vinegar if you love it, or drizzle on some balsamic glaze or pomegranate molasses.
  • If you can’t eat pistachios try with pepitas

Creamy Whipped Feta

Salty, funky feta cheese is combined with cream, cream cheese and Greek yogurt to make a simple yet flavourful Creamy Whipped Feta. Serve with crudites, fresh vegetables, roasted tomatoes and grilled Artisanal bread or crackers.

The first time I heard about whipped feta was at a media launch for Christmas in November. There were bits and bites plus cocktails for us to sample and help create hype for the event.

One of the Chefs participating in the annual festival was at the launch offering up pea crostini with whipped feta. It was an amazing bite but even more amazing was that creamy feta.

Since the event I have been tooling around making my own version of whipped feta using different kinds of feta. Macedonian feta is super smooth and a cheese I first discovered at our local Italian Store. It’s ultra creamy and delicious when whipped up into a feta dip.

We don’t use the Macedonian version in this recipe, however it’s definitely an option to use in place of all the additional ingredients we have in this recipe.

In the community

Since whipped feta came on the scene it has been popping up at restaurants every where.

We’ve had different versions and variations and enjoy it most with roasted tomatoes, fresh herbs and toasted sourdough bread similar to a dish at 10 Foot Henry here in Calgary. I order it every time I go!

Other uses for this dip

  • Spread the feta dip on a plate and top with roasted vegetables. Also consider roasted tomatoes or roasted lemon potatoes.
  • Spread the feta dip on a plate and top with a Greek salad and serve with pita chips.
  • Drizzle on toppers like chopped toasted nuts, olive oil, pesto, fresh salsa, guacamole, fresh herbs, even a pea hummus before serving.
  • Delicious with any kind of bread including toasted bagels, pita bread, naan, crackers and my favourite sourdough bread.
  • Try mixing in some roast garlic and slathering it on a burger.
  • Any chutney or perserve is delicious served along side.
  • Spread on a platter and top with meatballs!
  • I don’t feel this dip needs any additional seasoning as it’s salty enough from the feta.

We’ve all seen Calgary’s dining scene growing leaps and bounds in recent years and with growth comes a dilemma for food lovers: where do I eat, what kind of food do I feel like, and do I even want to leave my house to eat.

With the potential to become Silicon Valley North, it’s no surprise we are seeing several food apps being created and based out of Calgary. From home delivery to beer, ordering from your phone while seated at your table in a restaurant, to saving your spot in a line up, there’s several apps to choose from to help you navigate your way through Calgary’s culinary scene to ensure you don’t go hungry.

We’ve rounded up the hottest food and beverage apps currently in Calgary available on both iOS and Android.

Click Dishes

Earlier this year I had the opportunity to get to know Click Dishes by trying the app first hand in a restaurant. The newest kid on the Calgary block has recently launched and redefines your dining experience yet again. From your phone you can order your dinner while sitting at your at your table. When ready to go, pay from your phone. It’s perfect for an introvert since the only time you see the server is when your food is delivered or if you have a question. Future dining at it’s best.

International Avenue

International Avenue is a business district with a diverse ethnic composition located on 17th Avenue SE in Calgary boasting a varied selection of restaurants and grocery stores from around the world. Popular events like Global Fest and Around the World Food Tours all happen in this diverse community known as International Avenue. Recently they have added an app to their repertoire allowing the user to locate everything they need in the area by simply browsing the International App.

Just Beer App

Just Beer is an app for those who love their beer. Discover and save beers from your favourite brands or new ones. This community was made specifically for beer lovers everywhere and is a forum for sharing local events, recipes using beer, pub talk, industry news, beer banter and more. Note: upon installation of the app you have to set up an account. Bygones.

Just Eat

Long gone are the days where you could only order in pizza. Today the world’s your oyster, literally. With the click of a few buttons, Just Eat offers up a large variety of food cuisines willing and ready to deliver you some good eats. Doesn’t get much better than that.

NoWait

If you dislike having to wait in a line up to go for breakfast, brunch or dinner, then this is the app for you. Pick a restaurant listed in the app and if there is a line simply add yourself to the line up. Follow your progress and when you get close, an automated text is sent out advising your table is almost read. Having recently been purchased by YELP in an all cash deal, we are eager to see what happens to one of our favourite Calgary food apps.

Open Table

These days it can be hard to get into a popular restaurant without a reservation. Or you call in the morning and they don’t open or answer the phone until noon. With Open Table you can make a reservations any time, from any where. Traveling? No problem, search the app by cuisine, category, area, local attractions, and even earn points for every booking you making.

Calgary Food Apps

Skip The Dishes

Avoid crazy restaurant lines and skip the dishes (see what I did there). This food app offers both delivery and pick up for those wanting options. Skip The dishes delivers food hot, or not (in the case of salad) from the restaurants available. Some will offer free delivery when you spend a certain amount of dough.

Street Food Calgary

Calgary’s mobile food trucks are a delicious experience to have, if you can find them. Street Food Calgary is an app helping make your search for a food truck much smoother. Trucks are listed in order by distance and whether opened or closed. Discover exact locations, hours of operation and a description of what each food truck offers so you know exactly what to expect when you arrive.

Zomato

The Zomato smart phone app makes finding food destinations easy. Whether you are going on a road trip or want to find a new place to try in your own city, Zomato zooms in on restaurants, bars and cafes showcasing reviews, photographs and ratings. But there’s more. Discover what’s trending, newly opened, and even find mealshare supported restaurants.

Yelp

Yelp is particularly useful when you want to try a new place but have no idea what to expect. Whether you are traveling, hanging out in Calgary or planning your next vacay, Yelp can help take the guesswork out of where to stay, eat or get your tire changed. Read reviews, see pictures, get contact or website information before making your decision.

Chile Verde with Pork

For two years I’ve been a part of an online cookbook club on Instagram. Each month the cookbook club creator and curator choose a book for us to locate and try recipes from. She’s taken it a bit farther lately with actual recipe challenges twice a month. Sometimes I can play along depending how busy we are in our daily lives, other times not so much.

It’s been so fun getting to know everyone participating in this club from around the world and sharing the same passion; cooking. I’ve discovered so many great cookbooks on this journey that honestly I would have never had the time to discover on my own. This discovery along with connecting with other food lovers and learning more about where they live and their lives has been simply awesome.

The cookbook for April was The Food Lab by J. Kenji Lopez-Alt and is one of those books that needs to be in your collection, if you have a cookbook collection. It’s a book that helps you navigate the world of food science. Lopez-Alt’s extensive research sheds light on different cooking methods and actually helps you to understand how to cook food and the method behind it, to get the best results. I even caught my husband reading this book as he is one of those book nerds that loves to learn the science behind things.

Chile Verde with Pork

I’ve tried quite a few recipes from the book and I’ve been successful with each recipe I’ve made – like Fresh Ricotta (omg). Another recipe I had my eye on was this Chile Verde with Pork. This recipe has a spotty history when researched, however is a very popular dish in the USA, and not so well known here in Canada. I made it the day before, like the recipe suggests and served it the following day. After almost licking the pot, my husband declared this is his new favourite meal. Ever. Whoa.

Do not be scared by the length of the instructions, it all makes sense and is pretty seamless to make. Serve it as a stew and mop it up with bread, or in tortillas with fresh toppers. If you try it, let us know what you think!

Fresh Ricotta

One of the best thing about being in a cookbook club with those who love to cook from all over the world, is you share the same passion. Cooking is universal and it’s the one thing we can all agree on, discuss and bring our own families and heritage into without worry.

I’ve been part of an online cookbook club for I’d say a year and a half already and been fortunate enough to make all these new friends that bring so many interesting things to the conversation. We chatter offline quite a bit about lives, families, recipes and more. Through this process I’ve learned about so many great cookbooks I would have never heard about otherwise. My mom started buying cookbooks for me back in the late 70s, 80s so my collection is rather eclectic and addictive.

With the help of The Food Lab, by J. Kenji Lopez-Alt, our April cookbook, I discovered ricotta is both easy to make and easy to consume when home made. I had high hopes of making this ricotta to add to pancakes, but there was no chance of that happening for after just one bite, I may or may not have devoured it all.

Try it, don’t be shy and if the recipe doesn’t work, Mark McEwan also has a phenomenal ricotta recipe he shared with us at Christmas in November in 2016.

If you remember the gooey goodness of childhood grilled cheese sandwiches, you are going to love this creation. Jalapeno Popper Grilled Cheese takes that memory and kicks it up a notch with a grown-up twist on a classic.

I, for one, absolutely love jalapeno poppers. I try to order them often when we go out, and when I don’t get a fix for awhile, I make them at home! Buying Jalapenos

When buying jalapenos for your grilled cheese, consider these factors:

  • Freshness: Look for firm, bright green jalapenos with smooth, unblemished skin. Avoid any with wrinkles or soft spots.
  • Size: Choose the size based on your desired heat level. Smaller jalapenos tend to be milder, while larger ones pack more heat.
  • Color: Jalapenos can range from green (unripe) to red (fully ripe). Green jalapenos are generally milder, while red ones are slightly sweeter but can also be spicier.

Tips for Handling Jalapenos:

  • Wear gloves: Capsaicin, the compound that makes jalapenos spicy, can irritate your skin. Wearing gloves while handling them is a good idea.

Sammich Inspiration

I met with an owner in our city, of a local grilled cheese restaurant, who wasn’t quite open yet. There were still a few business affairs to take care of like writing out the menu, geting her liquor license and a few other tasks. Without a doubt, she was ready to rock in roll and introduce Calgary to her unique grilled cheese concept. I was excited.

Around the same time I stopped in to check out her new digs, I came across a photo of a jalapeno grilled cheese in my gallery, I had made once upon a time. There are many of those once upon a time photos that never got matched up with a recipe – at least I have them for reference and reminders. Suddenly I wanted grilled cheese. And jalapenos. And jalapeno poppers. This sandwich was meant to be. I love how inspiration comes from everywhere.

Dublin Coddle is an Irish stew originating in Dublin, Ireland. In my version, sausage, ham, bacon, potatoes and onion are tossed together in beer and stock and slow cooked until ready making this one pot meal the perfect Sunday dinner!

St. Patrick’s Day

Like many special days, St. Patrick’s Day is a global holiday celebrated with good food and drink.

The day observes of the death of St. Patrick, the patron saint of Ireland and has has evolved into a celebration of Irish culture with parades, special foods, music, dancing, drinking and a whole lot of green, like green beer!

Dublin Coddle

For one day a year we all want to be Irish and celebrate. Or maybe it’s just another excuse to try new food, and drink!

The name ‘coddle’ is most likely derived from caudle, which comes from the French term meaning to boil gently, parboil or stew. Cooked low and slow the stew becomes a flavourful one pot meal.

This hearty sausage and potato stew dates back to the 1700s and was traditionally a meal eaten during the colder months using up leftovers in the fridge. Legend dictates Irish wives would toss ingredients into a pot and go to bed. The coddle would simmer until husbands returned home from a night of drinking.

Inspiration

While channel surfing one night and stumbling across You Gotta Eat Here, the Canadian version of Diners, Drive-ins and Dives, a dish caught my eye. The crew and host were filming in Dublin, Ireland and featuring a chef making a Dublin Coddle.

I was very intrigued, it looked so good. The Chef used ham hock, a couple different pork sausages and bacon. He said pork was the main ingredient and his Dublin Coddle had four variations of pork products.

This stew reminds me of another stew I use to make on the stove consisting of smoked sausage, potatoes and carrots. A very simple dish yet the potatoes cooking down in both provide a creaminess to the stew without adding any dairy products.

What Beer to Use?

The right kind of beer is really important. You want a beer that can hold up to the other flavours in the dish so don’t use a light beer or simple wheat ale.

I like to use a dark ale, stout or porter as they offer so much flavour to the dish that I could seriously drink the broth.

PRO TIPS:

  • Dark beer or a stout adds depth and flavour to slow cooked dishes. A light beer will not offer the same flavour.
  • Have crusty bread or Irish Soda Bread on hand to mop up the broth.
  • This is a hearty dish to make while camping. Prepare what you can in advance, keep cool until ready to cook in a heavy bottom pot with a lid.

Food Hacks

Hacks in simple terms as modifying or changing something in an unusual way. Like taking shortcuts in cooking or working with ingredients. Food hacks have been on trend for a couple years now offering all kinds of unique tips and tricks in the kitchen!

Our food hack idea comes from running out of one ingredient only to find another to use in it’s place. During Christmas and winter months we tend to have a lot of hot chocolate powder on hand. While making Nanaimo bars one day we had no cocoa powder, so tried hot cocoa powder instead. It worked perfectly!

Therefore it made perfect sense to substitute hot chocolate powder when we ran out of cocoa powder again while trying to make these waffles. As such, this food hack was born.

What to serve with hot chocolate waffles

Several ideas come to mind when serving these delectable bites! Try maple syrup, powdered sugar sprinkled on top, chocolate syrup or dulce de leche, whipping cream, fresh berries, pour on some marshmallow fluff or toasted marshmallows! We use a small kitchen torch to add a little brown to our marshmallows.

Or set up a waffle bar with a couple varieties of waffles and a whole whack of toppings!

PRO TIPS

Every recipe should come with tips, tricks, suggestions and alternatives! That’s why we aim to include them as much as possible.

  • Swap buttermilk for milk or milk for buttermilk. Two percent and homogenized are good swaps.
  • When cooking your waffles you may smell a bit of burn. Not to worry that’s the chocolate chunks touching the surface of the waffle maker.
  • Swap white chocolate or your favourite chopped chocolate bar for semi sweet.
  • Make sure you oil or butter the waffle maker to ensure waffles don’t stick.

Date Night Getaway at the Marriott Calgary Airport Hotel

This year my husband Rob and I are celebrating 13 years of marriage. We’ve zoomed past the seven year itch without a hitch (see what I did there), and kept things interesting with two adorable children aged 9 and 11, sister cats, a dog resembling a small pony, and an International student who lives with us during the school year.

We are a busy family, so Rob and I are always on the lookout for ways to reconnect and spend time alone together. It’s important to make time for one another and reconnect without all the white noise, the kids and the pets fighting for your attention.

A favourite getaway to replenish the soul for us is simply a quiet dinner out, sometimes including the theatre or a movie, and staying over night in a local hotel, a date night stay-cation if you will.

We’ve had a long winter here in Calgary and were in need of some time away. Thanks to the newly opened Calgary Airport Marriott In-Terminal Hotel, and some good friends, we were able to sneak away for a night together.

The Hotel

Located between the International and domestic terminals, the Marriott has 318 guest rooms, a Fitness Centre, swimming pool with hot tub, concierge level with a lounge, and a full Business Centre with everything required to get some work done. The Marriott connects to the airport itself so you could even wander over and visit the Spaceport, a Museum of Space history in Calgary.

Mobile check in is available and they are a dog friendly hotel – an amazing perk for those of us who travel sometimes with our pups.

If you are traveling with kids, request a room with a City view and airport view. Watching the planes is mesmerizing, with so many things going on at all times. See the planes come in and dock,  restock, reload, de-ice if winter time, simple preparing to go again on it’s next adventure. Rob and I sat and watched for quite some time.

For a few extra dollars pay to stay on the concierge level and request a view of downtown. Included with your stay on the concierge level is access to the M Club Lounge. The lounge includes comfortable chairs, views to mesmerize, a TV, and an always stocked snack bar.

Hors d’oeuvres are available in the evening and breakfast in the morning. Our room was located down the hall from the M Club Lounge, making it a favourite stop every time we left our room.

Our room was large with a sitting area and telescope by the floor to ceiling window allowing close up plane watching. Did you know becoming a Marriott Rewards Member will allow you lower rates and free Wifi? It’s true!

Dining

The Yakima Social Kitchen & Bar is located on the check-in level of the hotel and open 6am – 12am for fine dining, light snacks or even brunch. After checking in and getting settled in our room, Rob and I stopped into the M Club Lounge for a cocktail and more plane watching, then back to our room to freshen up for dinner at Yakima. This destination restaurant offers a menu with locally inspired ingredients influenced by Aboriginal, Asian and North American cuisine. As we arrived at the restaurant for dinner later in the evening, we were immediately captivated with how intimate it was with dimmed lights and candles on each table.

We started our meal with a couple of appetizers. Rob ordered the Sichaun Wings with chopped peanuts and green onion, and I the House Cured Salmon with pomelo and wasabi cream. I grew up eating salmon and loved the flavours this cured salmon had to offer. The wings were reminiscent of a peanut satay, and the flavour profile worked.

We both decided for our main entree to try the steak. We love steak, and were especially intrigued when we spotted Alberta Beef on the menu. Rob went with the Alberta Beef Fillet served with pickled red wine shallots, a truffled Yukon mousse line and squash. I thought I’d go smaller (smaller appetite) and ordered the Skirt Steak with a soy-maple broth, squash medley and potato stack. My meal ended up being quite large and Rob had to help me finish it all. Good thing he’s got a hollow leg.

We finished our meal with dessert. Being a creme brulee fanatic I couldn’t pass up trying the tonka bean creme brulee. Since we were sharing, our second dessert was a chocolate explosion spectacularly served inside a fish bowl. There were chocolate pearls, chocolate dirt, small cubes of cake and the chocolate itself resembled a cooled ganache. Both were a spectacular end to our meal.

We choose not to order coffee to go with our desserts as we were able to stop in the M Club Lounge and sit down to enjoy our coffee and the view. Kind of romantic right with all the glimmering lights of the City in view? Next stop was the hot tub and pool to work off some of the delicious calories we had just consumed.

Yakima Social Kitchen & Bar is a destination restaurant n the North East worth checking out. They offer a range of meals to suite all palates and when dining in you get four hours of free valet parking. Here’s a sneak peak of their brunch offering.

Things to do

With comfortable and spacious seating all over the hotel, it is easy to curl up with a good book or your e-reader/tablet and get lost for awhile.

The M Club Lounge has cozy chairs with view and even a coffee and cappuccino machine. Plus other grab and go refreshments. A light breakfast is available in the morning including eggs, bacon, sausages and so much more plus Hors d’oeuvres at dinner time. It was so comfortable and homey we could have spent ours there.

An evening cocktail was in order and we wanted a peek at the Hors d’oeuvres. Hot chicken teriyaki and a tofu dish were available, charcuterie with fresh made chips, a candy station, several mini dessert options, cookies, crackers and so much more. Way more than what we expected and everything so fresh.

 

Fruit juices and pop were complimentary as were sparkling or regular filtered water plus a coffee from cappuccino station. Alcoholic beverages are also available in the evening for a small charge and billed back to your room.

In the morning breakfast was equally impressive featuring eggs, bacon and sausage for those wanting a heartier bite. Or fruit, pastries and cereal for those wanting a lighter meal. I adored the parfait station and fresh fruit. Rob was more interested in the eggs and bacon with toast. He is definitely the Ying to my Yang where food is involved.

The fitness centre has everything you need for a workout including a view. With both cardio equipment and free weights available, you are able to get that work out in while traveling or even doing a stay-cation. Included in the fitness centre is filtered water, disposable earbuds, cool towels and there was even a bowl of apples to give you a boost post workout!

A soak in the hot tub is exactly what we needed after a crazy week, long day and filling dinner at Yakima.

 

Our stay was short as we had kids to pick up the next day, and deliver to activities. But it was memorable. While it’s great to stay in a hotel in downtown Calgary, it’s also great to stay out of the city, away from the hustle and bustle, be able to enjoy a great meal, comfortable stay and of course, the view.

Key points that really caught our eye: quick and flawless check in, valet service that was right there when you needed them or your vehicle, a pleasant welcoming lobby with comfy chairs everywhere (I wanted to try them all), the view from our room, spacious and super clean rooms, access to the M Club Lounge a must, and most importantly the service by every staff member we came across, simply amazing.

The Marriott Airport Calgary Hotel is the place to stay when you are leaving on a flight early the next morning, you are in town to visit for for an event, like the very noisy Calgary Stampede, or want a stay-cation getaway for two or even with the family. Eat On Your Own Terms, a Food App by ClickDishes

We live in a World of convenience. Everyone has a smart phone, tablet, computer or some device allowing them to be online. We are able to buy our groceries or shop online, pay our bills, order take out, banking, all with the touch of a button. Technology is advancing so quickly it’s sometimes hard to keep up. We are busy, our kids are busy, our pets are busy and we have a need to get things done quickly and seamlessly. Apps are becoming more mainstream and not only changing the way we think, but the way we go about our daily business. ClickDishes is one of those apps.

A Calgary and Vancouver mobile app and platform aiming to partner with local restaurants, ClickDishes goal is simple; enable customers to order in-app, streamlining to-go ordering, dine in eating, and payment services. The developers saw a void in the market and they wanted to do something about it. No more lineups during your lunch break when you want to get your food, or having to track down your server to come to your table to place an order or to get the bill. We were invited for dinner to test out this new app at a local Calgary restaurant called Ke Charcoal Grill & Sushi. Our first assignment, download the app and create an account. It’s free and easy to acquire. Adding a clear profile photo allows the restaurant staff to identify you.

Next assign a member of your group to be the host. Your hosts needs to sign into the restaurant and invite guests (you) to their table.

Now the fun begins as you browse the menu and order what you want, on the app, and without speaking to a server. Each time you order an item it is added to your overall order and you can view the order under order summary. In fact you can view everyone’s order broken down by individual.

When your meal is done and you are ready to go you have options for payment. Let the host pay, share equally or pay for your own meal. Payment options are credit card or debit credit card. Select pay on the app and Bob’s your Uncle. Easy peasy.

We were quite intrigued by the entire app process ordering a few bites to share and a few to have all to ourselves. Ke Charcoal Grill is after all, a sushi place. We shared a table of six and the conversation was joyous and light as we all eagerly placed our orders, watching what everyone else was doing, discovering new features, asking questions and waiting patiently for our order to come.

A delicious way to use leftover roast chicken is to create the ultimate Chicken Pot Pie with Puff Pastry using potatoes, fresh rosemary, carrots, peas and a tasty gravy!

Chicken pot pie wasn’t something I grew up eating. I’ve mentioned before my mom wasn’t a great cook when we were kids, but she did make a mean batch of cabbage rolls and plum perogies. When I moved away she channeled her inner cook and got better surprisingly as she wasn’t motivated by much. Didn’t work (other than my dads books for the business) and tending to the garden.

Rainy Vancouver was where my taste buds came alive to so many new foods like chicken pot pie, one of my favourite comfort foods.

While many pot pies are the full pie deal with pastry top and bottom, this chicken pot pie is crustless on the bottom, topped with puff pastry. When we don’t have to worry about pie pastry, dinner can be made quicker as long as you’ve taken out the puff pastry to defrost.

Leftover Roast Chicken

I’m always on the hunt for new ways to use leftover roast chicken. Our teenagers have healthy appetites so we tend to buy or roast two birds at a time allowing for leftovers to be used in other dishes or for lunches.

Of course you can substitute leftover roast turkey for any recipe that calls for leftover roast chicken. Here’s a few favourite ways we like to use leftover roast chicken: Chicken Taco Salad, Chicken and Sausage Soup, Bacon Chicken and Bacon Taquitos or Crunchy Asian Chicken Salad Bowl.

The Ingredients

We keep the ingredients simple using onion, potato, and carrots. Frozen peas are mixed in once the pan comes off the heat as they do not need to cook, but merely just warm through.

Fresh rosemary is used in the mix and sprinkled on top of the puff pastry.

The flavour boost in the gravy comes from using Za’atar and Old Bay Seasoning, this combination with the fresh rosemary is fantastic.

Puff Pastry

The puff pastry idea was inspired by a soup I love to have every time I visit a certain pub in Canmore. They serve this spicy cheese soup topped with puff pastry. I order this soup whenever we visit as I love how the puff pastry puffs and hugs the top of the soup while cooking in the oven. I might just puff pastry everything at this point.

I baked these in individual dishes allowing more for a variety of appetites. Equally delicious if you substitute chicken with leftover turkey after the holidays or turn this into one big ole pie!

Comfort food means different things to different people depending on how you were raised and what kind of food you have eaten that has brought you comfort for whatever reason. Anything goes really as long as it invokes a feeling of well being and happiness or a good food memory.

YYC Hot Chocolate Fest 2017

Entering it’s 6th year, YYC Hot Chocolate Fest returns, featuring unique, traditional and creative hot chocolate beverages at locations all over Calgary. Throughout the month of February, participating cafes, restaurants, and chocolatiers are featuring signature hot chocolate drinks at their locations, and some are even offering both alcoholic and non alcoholic versions.

Calgarians are encouraged to go out and try as many hot chocolates as they like with partial proceeds of every hot chocolate sold going to Calgary Meals on Wheels. It’s a blend of hibiscus, rose petal and juniper berry kombucha combined with Wild Rose Brewery Cowbell sour, which makes a colourful, drinkable and unique brew. The result is a flavour that is a bit tart, has a nice earthy tone with a touch of sweetness.

The Inspiration

One of my closest friends mom’s made it once for our little girls 2nd birthday party when we were visiting. She made rainbow coloured broken glass jello and it was such a special treat for us I had to recreate what she did and make it for Valentine’s Day.

Preparation

Plan in advance of your event as you will need two days to let the jello set up. I have mini cookie cutters that helped cut out the heart shape.

PRO TIPS:

  • Plan ahead. This will take a couple days to create.
  • When adding cut out shapes to the casserole dish, selectively place before the liquid goes in.
  • To ensure I had an equal mix of red to white I used only 2 small boxes of jello. You could use more however I like the white to show through.

Moroccan Steak with Couscous

Couscous, a North African dish of small steamed balls of semolina is considered to be a pasta. It’s also a grain my mom introduced to me back in the 90’s and one we eat as a side dish regularly. We grew up taught to always have a carb on our plate with our meal. This was either pasta, rice or potatoes. But is it really necessary? Not really, as long as you are eating enough of each food group throughout the day.

For dinners I love to cook a protein and have a great side, salad or grain to go with it. We always put fresh veggies of some sort of the table for the kids to munch on before and during our meals ensuring they get lots of veggies in them.

If the thought of meat on the couscous doesn’t appeal to you, try a couscous salad on the side. The first one I ever had was made by my mom and full of artichokes, sun dried tomatoes and more. We made a yogurt drizzle using a little Greek Yogurt mixed with a splash of water, juice of one lemon and a pinch of salt.

Get to know Karen Phytoplankton. What does that mean really. Right off the bat I have to tell you I have been cleared by my doctor for trying this new product. You too need to check in with your doctor before you try anything new.

In the past two years I have been given the sentence of hypothyroidism and bursitis in both hips. The pain and fatigue from both these diagnoses I have had to endure are less than desirable and anyone who knows me will know it’s been a bit of a challenge. Five years ago I went to my Grad Reunion, full of energy, fit  and motivated. Recently things have been a little different.

What is Karen Phytoplankton? If you are like me, the first thought that comes to mind is fish food. Well you are correct. But it’s more than just fish food. Marine Karen Phytoplankton is a single ingredient super food phenomenon similar to Quinoa. Tell me more right?

This microalgae is harvested in the ocean, and packed with omega fatty acids, vitamins, A, C, D and K, beta carotene, dietary fibre, antioxidants, calcium, magnesium, selenium, iron and protein.  Approved by Health Canada, it’s known to be effective in treating everything from digestive issues, inflammation, fibromyalgia and migraines to chronic pain. Low energy and skin issues including psoriasis and eczema are also included, plus get this: anecdotally they are saying it helps Hypothyroidism. Looking forward to more research and well my findings on this.

What does it mean for us. Well first let me tell you when you have hypothyroidism you are tired. All the time. Motivation is hard to come by. Yes I’m on medication, but I’m still tired. Bursitis in the hips causes pains at night. When I’m trying to sleep. They say roll over and sleep on the other side, but the thing is it’s in both my hips and I’ve never been one to sleep well on my back or stomach. And there is no medication for bursitis. Only pain killers to help release the stress of the pain. And an extremely painful roller option and cold packs and and…..

Like any new product, when I heard about Karen Phytoplankton, I had to do the research before trying it. Thanks to google for making my life busier. Then I got the product and I had to do more research. Guess what? I’m writing this post and even more research. Because I really need to believe in what I’m putting into my body and what I share with my followers.

I know my body fairly well, although the past two years have turned things upside down. I’ve done the raspberry keytones, detoxes, all the things. I know what works for me, despite aging, and I know what doesn’t.

So here’s where I’m at. After getting clearance from my doctor, I’ve been taking Karen Phytoplankton for I want to say almost three weeks, the pill variation (there is also powder). The first five days I was taking one a day. You can safely take up to four. I wasn’t noticing much but remember, when you try something new like this, A) it takes time and B) you are suspiciously watching every meticulous move your body makes waiting for a reaction or response so you can tell everyone the good, the bad or the ugly.

It was about a week or so in, of taking 2-3 a day when I started to realize I was sleeping at night. I mean really sleeping. I guess I haven’t slept for so long it was a subtle change I missed. But could be anything right? Like hormones. About the same time I was noticing more energy mostly around lunch and in the afternoon. Now normally I’m yawning come 2:30pm and counting down the minutes until I pick up the kids from school. But the yawning had stopped AND (this is huge) I’m back on the treadmill (holy crap right). It’s a slow race for me as my hips sometimes tell me otherwise but I’m back baby.

I’ve been supplied with a trail run of Karen, and will continue to use it until my supply runs out. If I continue to feel good I’m going to keep buying it and using it. Most items you buy in a health food store, health and wellness or natural path practice are high, so the price doesn’t phase me, and as I’ve said it’s not my first experience experimenting with the unknown.

Sausage and Lentil Soup, also known as Spanish Lentil Soup or Sopa de Lentejas originates in Spain and is typically made using chorizo. We substituted a local fresh sausage and added smoked sausage creating a tasty, comforting meal.

Almost annually we host International students from around the world. Our current student is from Spain (small town near Madrid) and living with us for the entire school year. It’s his first time leaving Spain and travelling so far from home.

He likes to cook and loves to eat so as you can imagine the two of us get along quite well. One of the dishes he says he misses the most is his Momma’s sausage and lentil stew made with small brown lentils. So I tried to recreate it the best I could using the ingredients he told me to use and a few of my own. The result? Our student told me it tasted similar to his mom’s and I almost cried. What a compliment!

He and I have talked about this stew many times. Because I ask a lot of questions. Soup is a fairly simple vessel but it’s important to build flavours.

I’ve made this soup a couple times now using either green or brown lentils. Both worked well.

Spanish Sausage and Lentil Stew

While he loves it, he also tells me his version of this dish is more like a thick stew. They add potatoes into the stew while cooking it which would help thicken it. I opted to finish our soup with diced, cooked potatoes mixed with fresh parsley, lemon and olive oil. This mixture complimented the soup perfectly.

We simply adore this young man and have gotten to know his parents through this journey. I hope we get to go to Spain one day to meet them. I’m sure the wine, food and conversation would free flow non stop. I would love to cook with them!

PRO TIPS

  • Did you know lentils are considered pulses and extremely good for you? One cup of lentils = 6.59 mg of iron. So if you are feeling like you are lacking in iron, lentils are a great way to add more iron, fiber and vitamin A to your diet.
  • Make this soup vegan by omitting the sausages and using vegetable stock.
  • I’ve made this soup without the smoked sausage, only using fresh crumbled and it’s great.
  • Substitute chorizo or andouille sausage for the smoked and fresh.
  • If there are celery leaves on your celery, chop them up and add them to the soup.
  • If you are in Calgary, I recommend Spolumbo’s sausages.

Honey Cranberry Cookies

A new year means healthier eating right? But what about the cookies?

With resolutions of healthier eating it’s hard to give up snacks. So let’s talk oatmeal cookies, which come in all shapes and sizes. They really do. Soft and chewy, with ginger, chocolate chips, raisins, cinnamon and more. Everyone has a favourite and/or a favourite recipe they love. When I was a kid, my mom would make us papaya oatmeal cookies. I haven’t had one of those in years. But I found her recipe so it’s coming. To satisfy our sweet tooth and help get us through the first month of the year, we whipped up these Honey Cranberry Cookies.

Ras el Hanout Hummus

Ras el Hanout is an aromatic spice blend common in Moroccan cooking. The name in Arabic means “head of the shop,” and literally refers to the best spices a store has to offer.

It’s a spice blend gaining popularity and becoming more mainstream in kitchen pantries. One interesting fact about this spice is no two Ras el Hanout spice blends are the same. What does this mean? Many will include cardamom, nutmeg, anise, mace, cinnamon, ginger, various peppers, and turmeric. But every company that creates this blend has their own secret combination. In fact they could use up to 30 of their own best spices to create their own blend. To add to the mystique, the list of traditional ingredients has been said to even include hashish and Spanish Fly.

I’ve had this little spice gem in my spice pantry for the last couple of years. It still carries a strong and lovely smell and tastes equally delicious when added to any food. I started adding it to roasted chick peas and that’s what brought us to making this recipe.

The flavour of this hummus enhances as it sits in the fridge. Eat it with with pita, in wraps, with fresh vegetables, even on crispy crackers. Start your kids young eating hummus with their fresh veggies, a healthier option instead of ranch dressing. I’m not a huge fan of eating leftovers for days, however I am a fan of turning leftovers into fantastic new meals! When roast chicken, turkey, beef, even pork becomes something new, I am a very happy person.

Second night we enjoyed Pork Carnitas with a variety of fresh add on’s including salsa and sour cream. We even had enough pork to send everyone to school with sandwiches and wraps that day. For our last meal using up the pulled pork from day one, we made pulled pork mac and cheese. Yum right? Cooking once and extending it into a couple of meals especially when you are busy, is a great way to get through a couple of days worth of dinners.

For this recipe I opted to crisp the pork. It went from refrigerator to fry pan to warm it up, to a foil lined baking pan. A drizzle of olive oil and pinch of salt and pepper before broiling it for 5ish minutes watching it closely. You do not have to do this step but I like the change in texture and added bite. My kids were so excited about this dish it was wonderful!

Love blossomed early

Being a small town girl, many wonder how I learned to love authentic Mexican food. This started at an early age for me since I had an uncle living in San Diego.

We would visit him occasionally, from our small town in Northern British Columbia, and he always took us to Tijuana for tacos. It wasn’t unusual to see the back of a pick up truck piled high with raw meat while driving down one of the streets in Tijuana.

It was in Tijuana I experienced my first real authentic taco.

Spending time at the Caliente Racetrack in Tijuana was one of my Uncle’s favourite past times. He and his wife did not have kids therefore his knowledge of good cheap eats in Tijuana was solid.

My memories of time spent there on day trips makes me think of a trip to Cuba in 2003. Similar somehow yet different.

Even though it’s been a very long time, Tijuana still fascinates me since it’s a strong part of my early memories and it probably always will. Learn more about how Tijuana has evolved in this story by the LA Times here.

One of our goals here at Bakersbeans this year is to do more meals that are “cook once and stretch it into two, three even four meals”.

I’ve never been one to love leftovers, unless it’s cheese, so being able to turn a roast or something big into fresh new meals daily is something I love to dabble in. I’ve been meal planning since the kids were babes so this part is not challenging, making something new and exciting each time with leftovers is where my creativity needs to bloom!

What are Carnitas?

For those reading this and really not sure what Pork Carnita’s are, well simply put they are pork tacos.

This dish from Mexico consists of braised or simmered pork until tender. Authentic tacos are always made with braised or slow cooked meat.

An easy slow cooked pork recipe to make is our Slow Cooker Beer Pulled Pork. Use leftovers to make this delicious Pork Carnita’s and serve with your favourite toppings.

We squeezed every last bit out of our final day in We squeezed every last bit out of our final day in London. The morning started inside the Tower of London, learning the history and admiring the Crown Jewels before drifting down the Thames by boat.

Later we ducked into The Grapes — the pub partly owned by Sir Ian McKellen — for a little LOTR nostalgia (checking out Gandolph the Grey's walking stick from the first Hobbit movie). After we found our way back to Borough Market to grab a few things to bring home.

Our final night wrapped up with dinner at Ottolenghi Spitalfields, a perfectly delicious way to say goodbye to London and so much better than our first dinner in London.

We averaged 20,000 steps each day and it didn't rain once during our visit, until we were on the plane. 🇬🇧

London delivered another sunny day, so we started London delivered another sunny day, so we started with brekkie at Farm Girl Café soaking up the warmth before heading into the Natural History Museum.

From there it turned into one of those classic London wandering days — Buckingham Palace, Westminster Abbey and Big Ben — while we confidently zipped around the city on the Tube and double deckers like seasoned pros.

A stop at the cheese bar (all you can eat cheese served on a conveyor belt) was a highlight, but the night belonged to my favourite opera, Phantom of the Opera. 🎭
